We just had to share this unbelievable delicious coleslaw recipe with you as it’s such a fresh alternative to standard cabbage and carrot slaw. We’re massive fans of Sabrina Ghayour and her Persian style and this coleslaw is bursting with flavour. We won’t lie, the list of ingredients is long and there’s a lot of fine chopping involved but take it from us it’s worth it. 
  • 4 tablespoons Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 heaped tablespoon cream of horseradish
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 heaped teaspoon nigella seeds
  • handful of raisins
  • half a white cabbage, finely chopped
  • a quarter of a cauliflower – florets thinly sliced (remove stalks)
  • 1 large fennel bulb – finely sliced (chop the fronds)
  • 1 red onion very thinly sliced into half moons
  • 2 apples (any type) – cored, quartered and thinly sliced (with skin on – red apples give a better colour)
  • handful of mint – fronds and stems roughly chopped
  • 20g dill – chopped as per mint
  • salt and pepper

Method

  1. First use a small bowl to mix the dressing ingredients: yogurt, mayo, horseradish, coriander, nigella seeds & cinnamon. Stir well.
  2. We found a mandolin was really helpful (and quick) to thinly slice the onion, fennel, apples and cabbage.
  3. Place the vegetables and apples in a large bowl and pour over the dressing.
  4. Sprinkle over the fresh herbs and mix again until everything is well combined.
  5. Enjoy as a bbq side or on a chunk of crunchy bread.
