This is not news but needs to be shared. Eggs and Avocado are the business. They are not only the most nutrient-dense foods out there but are an unbelievably delicious combination. Eggs, despite a bit of bad press in the past offer huge health benefits. The egg white is full of protein whilst the egg yolk is an excellent source of fat and nutrients. On Toast

Choose healthy toast (Rye, Sourdough), and cover with mashed avocado. Add poach or boiled eggs to the top and sprinkle generously with chilli flakes and salt. Or you can add pomegranate seeds for little bursts of freshness. 

With Sweet Potato Toast

For extra points, bin the bread and toast sweet potato slices.  Mash of slice the avocado and serve with eggs. This delivers a triple hit of nutrient dense, delicious food. You will never look at a Full English the same way again. See our other ideas for Sweet Potato Toast here.

Avocado Boats with egg filling

Heat the oven to 180° and place avocado halves in a baking dish. Crack and egg on top of each half and b are for 15 minutes. Season to taste. Serve on its own or with toast soldiers on the side. 

Wrap the Up

One of our favourites. Gently scramble two eggs with salt and pepper. Place in a wrap and add sliced avocado. Sprinkle with Coriander and close the wrap. You can even eat this one of the go (if you are an expert wrap maker…)

In an Omelette

Fry up some green pepper, red onion and garlic until soft and cooked. Add three eggs and a dash of milk whisked together. Sprinkle with cheese until the egg os cooked and the cheese is melted. Flip the omelette and serve with sliced avocado. 

Eggs Avonnaise on Ryvita

This may seem strange as Ryvita are indeed strange, cardboard like biscuits and yet totally moreish. Covered with the scrumptious Eggs Avonnaise they are thing of beauty. Soft boil three eggs and mash with half an avocado and a spoonful of natural yoghurt to loosen. Season and pile onto a Ryvita. It is so delicious it is hard to believe that you have just done your body a HUGE favour.
